  • 2 teaspoons sugar
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour, plus more for dusting
  • 2 tablespoons olive oil, plus more for greasing
  • 1 1/2 teaspoons salt
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • Flaky sea salt, for sprinkling

Instructions

  1. In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let stand for 5-10 minutes, until foamy.
  2. Add flour, olive oil, and salt to the yeast mixture. Stir until a shaggy dough forms.
  3. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Alternatively, use a stand mixer with a dough hook on low speed for 5-7 minutes.
  4. Place dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Preheat oven to 425°F (220°C). Grease a 12-cup muffin tin with olive oil.
  6. Gently punch down the dough and divide it into 12 equal portions.
  7. Roll each portion into a ball and place it into a prepared muffin tin.
  8. In a small bowl, combine olive oil, minced garlic, and chopped rosemary.
  9. Brush the garlic rosemary mixture generously over the tops of the muffins.
  10. Sprinkle with flaky sea salt.
  11. Bake for 18-20 minutes, or until golden brown.
  12. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
