Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 2 tablespoons (30ml) olive oil
  • 1 onion, chopped (approx. 150g)
  • 2 cloves garlic, minced (approx. 6g)
  • 1 (10.75 ounce/305g) can condensed cream of chicken soup
  • 1/2 cup (120ml) milk
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 cup (10g) chopped fresh parsley
  • 1 pound (450g) pasta

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in cream of chicken soup and milk. Bring to a simmer and cook until heated through.
  6. Stir in Parmesan cheese and parsley.
  7. Add cooked pasta to the skillet and toss to coat.
  8. Serve immediately.
