2 tablespoons (25g) Granulated Sugar
2 teaspoons Baking Powder
1 teaspoon Baking Soda
½ teaspoon Salt
1 cup (220g) Plain Greek Yogurt (full-fat or 2%)
1 cup (240ml) Milk (any kind)
2 large Eggs
1 teaspoon Vanilla Extract
Zest of 1 small Lemon
2 tablespoons (28g) Unsalted Butter


Instructions

Preheat your electric griddle to 350 degrees Fahrenheit (175°C) to ensure even and consistent cooking.
In a large bowl, whisk together the Greek yogurt, milk, eggs, vanilla extract, and lemon zest until smooth and thoroughly combined.
In a separate medium bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk well to distribute evenly.
Pour the wet mixture into the dry ingredients. Gently fold them together until just combined; avoid overmixing. Add more milk, one tablespoon at a time, if the batter is too thick, until your desired pourable consistency is reached.
Lightly grease the hot griddle with butter. Ladle about ¼ cup of batter per pancake onto the griddle.
Cook for 2 to 4 minutes on the first side, until bubbles form and mostly subside on the surface. Carefully flip the pancakes and cook for another 1-2 minutes until golden brown on the other side.
Serve the fluffy Greek Yogurt Pancakes warm, immediately after cooking, with your favorite toppings.
