- 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 lbs Yukon gold potatoes, peeled and cut into 1-inch pieces
- 1/2 cup chicken broth
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Place the potatoes in the bottom of a crockpot.
- Add the chicken on top of the potatoes.
- In a small bowl, whisk together the chicken broth, olive oil, minced garlic, oregano, basil, salt, and pepper.
- Pour the mixture over the chicken and potatoes.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and the potatoes are tender.
- Stir in the Parmesan cheese.
- Garnish with fresh parsley and serve hot.
Notes
- Chicken: Thighs can also be used in place of breasts.
- Potatoes: Red potatoes work well too, but Yukon gold have a creamier texture.
