- 500g / 1.1 lbs cooked and shredded chicken breast
- 1 head chopped romaine lettuce
- 250g / 1 cup halved cherry tomatoes
- 1 medium diced cucumber
- 1/2 medium thinly sliced red onion
- 150g / 3/4 cup cooked or canned corn kernels (drained)
- 150g / 3/4 cup rinsed and drained black beans
- 1 medium diced avocado
- 120ml / 1/2 cup BBQ sauce
- 30ml / 2 tablespoons olive oil
- 15ml / 1 tablespoon fresh lime juice
- 15g / 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Prepare the Chicken: If the chicken isn’t already cooked, grill, bake, or pan-fry it until fully cooked. Let it cool slightly, then shred or dice into bite-sized pieces.
- Chop the Vegetables: Wash and chop the romaine lettuce, cherry tomatoes, cucumber, and red onion. Add them to a large bowl.
- Combine Salad Ingredients: Add the corn kernels, black beans, cooked chicken, and diced avocado to the bowl with the vegetables.
- Make the BBQ Dressing: In a small bowl, whisk together the BBQ sauce, olive oil, and lime juice. Season with salt and pepper to taste.
- Toss and Serve: Pour the BBQ dressing over the salad and toss gently to combine. Garnish with chopped cilantro. Serve immediately or chill for later.
