  • 1 head chopped romaine lettuce
  • 250g / 1 cup halved cherry tomatoes
  • 1 medium diced cucumber
  • 1/2 medium thinly sliced red onion
  • 150g / 3/4 cup cooked or canned corn kernels (drained)
  • 150g / 3/4 cup rinsed and drained black beans
  • 1 medium diced avocado
  • 120ml / 1/2 cup BBQ sauce
  • 30ml / 2 tablespoons olive oil
  • 15ml / 1 tablespoon fresh lime juice
  • 15g / 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: If the chicken isn’t already cooked, grill, bake, or pan-fry it until fully cooked. Let it cool slightly, then shred or dice into bite-sized pieces.
  2. Chop the Vegetables: Wash and chop the romaine lettuce, cherry tomatoes, cucumber, and red onion. Add them to a large bowl.
  3. Combine Salad Ingredients: Add the corn kernels, black beans, cooked chicken, and diced avocado to the bowl with the vegetables.
  4. Make the BBQ Dressing: In a small bowl, whisk together the BBQ sauce, olive oil, and lime juice. Season with salt and pepper to taste.
  5. Toss and Serve: Pour the BBQ dressing over the salad and toss gently to combine. Garnish with chopped cilantro. Serve immediately or chill for later.
