Ingredients
1 lb (450g) lean ground beef
1 packet (30g) low-sodium taco seasoning
1 head romaine lettuce, chopped
1 cup (150g) cherry tomatoes, halved
1 ripe avocado, sliced
1/2 cup (50g) shredded cheddar cheese
1/4 cup (60g) sour cream or Greek yogurt
1/4 cup (60g) salsa
Fresh cilantro for garnish
Instructions
- Brown the lean ground beef in a skillet over medium heat until fully cooked, breaking it up with a spatula as it cooks.
- Drain any excess grease from the skillet.
- Add the taco seasoning and a splash of water according to packet instructions. Simmer for 2–3 minutes, stirring well to combine.
- In a large salad bowl, create a bed of chopped romaine lettuce.
- Top the lettuce with the warm seasoned beef, halved cherry tomatoes, sliced avocado, and shredded cheddar cheese.
- Add dollops of sour cream (or Greek yogurt) and salsa over the salad.
- Garnish generously with fresh cilantro.
- Serve immediately while the beef is warm and the lettuce stays crisp for the best flavor and texture.
Notes
Add crushed tortilla chips on top if you need a little crunch.
Squeeze fresh lime juice over the avocado to keep it bright green and prevent browning.
For meal prep, store cooked beef and fresh toppings separately, assembling just before eating.
