A healthy and delicious twist on classic Mexican street corn, combined with creamy pasta and a zesty, smoky dressing.
Ingredients

- 8 oz whole wheat pasta (rotini or fusilli)
- 4 ears fresh corn, husked
- 1 tbsp olive oil
- 1/2 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese
- 1/4 cup diced red onion
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to boil. Add pasta and cook until al dente. Drain and rinse with cold water.
- Brush corn with olive oil and grill until kernels are slightly charred. Alternatively, roast in the oven.
- Let corn cool, then cut kernels off the cob.
- In a bowl, whisk together Greek yogurt, mayonnaise, chili powder, smoked paprika, garlic powder, and lime juice.
- Add pasta, corn, cilantro, feta, and red onion to the bowl with the dressing.
- Toss everything together. Season with salt and pepper.
- Refrigerate for at least 30 minutes. Garnish with cilantro and serve with lime wedges.
