These irresistible Hot Chocolate Cookies deliver all the cozy comfort of your favorite warm drink in a delightful, chewy cookie form. Loaded with rich cocoa and pockets of gooey, melted mini marshmallows, they’re perfect for any occasion.


Ingredients

1/2 cup (113g) butter, softened
1/2 cup (95g) shortening
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon (5ml) vanilla extract
2 1/4 cups (270g) all-purpose flour
1/2 cup (48g) unsweetened cocoa powder
1 teaspoon (5g) baking soda
1/2 teaspoon (3g) salt
1 cup (150g) hot chocolate mix (powder)
1/2 cup (25g) mini marshmallows


Instructions

  • Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, shortening, and sugar until light and fluffy, about 2–3 minutes using an electric mixer.
  • Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  • In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and hot chocolate mix until evenly combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. Gently fold in the mini marshmallows using a spatula.
  • Drop spoonfuls of dough (about 2 tablespoons each) onto a non-greased baking sheet, leaving space between each cookie for spreading. If the dough feels too soft, chill it for 15–30 minutes for best results.
  • Bake for 10–12 minutes, until the edges are set and the centers still look slightly soft. The marshmallows should be melted and gooey.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For extra fudgy cookies, use a good quality unsweetened cocoa powder.
Don’t overbake! These cookies are best when slightly soft in the center.
Store cooled cookies in an airtight container at room temperature for up to 3-4 days.
