  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, very cold and cubed
  • 3/4 cup cold milk
  • 1 1/4 teaspoons active dry yeast
  • 1 cup (2 sticks) unsalted butter, cold
  • 1/4 cup melted butter
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Filling: Cook peaches, sugar, cornstarch, cinnamon, and lemon juice over medium heat until thick (8-10 min). Cool completely.
  2. Dough: Mix flour, sugar, salt. Cut in cold butter. Add yeast dissolved in warm milk. Knead 2-3 min. Chill 2+ hours.
  3. Laminate: Roll dough to a 12×18″ rectangle. Spread with half the cold butter. Fold in thirds. Chill 30 min. Repeat with remaining butter. Chill 30 min.
  4. Assemble: Roll dough to a 12×18″ rectangle. Spread filling. Roll into a log. Cut into 12 slices. Place in muffin tin.
  5. Bake: Brush with mix of melted butter, sugar, and cinnamon. Bake at 375°F (190°C) for 20-25 min until golden. Cool before serving.
