- 1/2 cup granulated sugar
- 1/4 cup cornstarch

- 2 1/4 cups all-purpose flour

- 1/2 cup (1 stick) unsalted butter, very cold and cubed
- 3/4 cup cold milk
- 1 1/4 teaspoons active dry yeast
- 1 cup (2 sticks) unsalted butter, cold
- 1/4 cup melted butter
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Filling: Cook peaches, sugar, cornstarch, cinnamon, and lemon juice over medium heat until thick (8-10 min). Cool completely.
- Dough: Mix flour, sugar, salt. Cut in cold butter. Add yeast dissolved in warm milk. Knead 2-3 min. Chill 2+ hours.
- Laminate: Roll dough to a 12×18″ rectangle. Spread with half the cold butter. Fold in thirds. Chill 30 min. Repeat with remaining butter. Chill 30 min.
- Assemble: Roll dough to a 12×18″ rectangle. Spread filling. Roll into a log. Cut into 12 slices. Place in muffin tin.
- Bake: Brush with mix of melted butter, sugar, and cinnamon. Bake at 375°F (190°C) for 20-25 min until golden. Cool before serving.
