- 1 tablespoon olive oil
- 1.5 pounds beef stew meat, cut into 1-inch cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 jalapeño, seeded and minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 6 cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1/4 cup chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Season the beef stew meat with salt and pepper.
- Add the beef to the pot and sear on all sides until browned. Remove the beef from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, red bell pepper, green bell pepper, and jalapeño. Cook for another 3-5 minutes, until the vegetables are tender.
- Stir in the diced tomatoes, beef broth, chili powder, cumin, smoked paprika, and oregano. Bring to a simmer.
- Return the beef to the pot. Reduce the heat to low, cover, and simmer for at least 1.5-2 hours, or until the beef is very tender.
- Stir in the black beans and corn. Cook for an additional 10-15 minutes, until heated through.
- Taste and adjust seasoning with salt and pepper as needed.
- Ladle the soup into bowls and garnish with fresh cilantro.
- Serve with lime wedges on the side.
