Ingredients

  • 1 cup (200g) firm tofu, cubed
  • 2 cups (400g) mixed mushrooms, sliced
  • 1 cup (200g) broccoli florets
  • 1/2 cup (100g) bell peppers, sliced
  • 2 tablespoons (30ml) vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) soy sauce
  • 1 teaspoon (5ml) ginger, grated
  • 1/2 teaspoon (2.5ml) black pepper
  • 1/4 cup (60ml) vegetable broth
  • 1 tablespoon (15ml) cornstarch mixed with 2 tablespoons (30ml) water

Instructions

  1. Press tofu to remove excess water, then cube it.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add tofu cubes and cook until golden brown on all sides, about 5 minutes. Remove and set aside.
  4. In the same pan, add garlic and ginger, sauté for 30 seconds until fragrant.
  5. Add mushrooms, broccoli, and bell peppers. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  6. Return tofu to the pan. Add soy sauce, black pepper, and vegetable broth. Stir to combine.
  7. Pour in cornstarch mixture and cook for 2-3 minutes until sauce thickens.
  8. Serve hot over rice or noodles.
