Ingredients
450g / 1 lb lean ground beef
185g / 1 cup long-grain white rice, uncooked
425g / 1 (15 oz) can black beans, rinsed
280g / 1 (10 oz) can diced tomatoes with green chilies
480ml / 2 cups beef broth
110g / 1 cup shredded cheddar cheese
1 tbsp taco seasoning
Fresh cilantro for garnish
Instructions
In a large skillet, brown the ground beef over medium heat; drain fat.
Stir in the rice, black beans, tomatoes with chilies, beef broth, and taco seasoning.
Bring to a boil, then reduce heat to low and cover.
Simmer for 18-20 minutes until rice is tender and liquid is absorbed.
Sprinkle with cheese, cover for 1 minute to melt, and garnish with cilantro.
Notes
Add a dollop of sour cream or sliced jalapeños for an extra kick of flavor.
For extra veggies, stir in corn or diced bell peppers during the last 10 minutes of simmering.
