Ingredients

- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 1/2 cup pumpkin puree
- 1/4 cup almond butter
- 2 tablespoons maple syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a medium mixing bowl, combine the rolled oats, protein powder, pumpkin pie spice, cinnamon, and salt. Mix well.
- Add the pumpkin puree, almond butter, and maple syrup to the dry mixture. Stir thoroughly until a thick dough forms.
- If using chocolate chips, gently fold them into the mixture.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- Remove the chilled mixture and roll into 1-inch balls.
- Place the formed balls on a parchment-lined baking sheet. Refrigerate for at least 1 hour to set.
- Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.

- Nut-Free: Substitute sunflower seed butter for almond butter.
