- 1 1/2 cups (180g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar (for crust)
- 1 cup (240ml) heavy cream (for filling)
- 8 oz (225g) cream cheese, softened
- 1/2 cup (100g) granulated sugar (for filling)
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- Red food coloring (optional)
- 1/2 cup (120ml) heavy cream, whipped for topping
- Crushed candy canes or peppermint candies for garnish
Instructions
- Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture firmly into a 9-inch pie dish.
- Bake crust for 8-10 minutes until lightly browned. Remove from oven and let cool completely.
- In a large bowl, beat 1 cup heavy cream until stiff peaks form. Set aside.
- In another large bowl, beat cream cheese and 1/2 cup sugar until smooth and creamy.
- Add peppermint extract, vanilla extract, and red food coloring (if using) to cream cheese mixture. Mix until well combined.
- Gently fold whipped cream into cream cheese mixture until no streaks remain.
- Pour filling into cooled crust and smooth the top.
- Refrigerate for at least 4 hours or overnight until set.
- Before serving, whip remaining 1/2 cup heavy cream and spread or pipe over pie.
- Garnish with crushed candy canes or peppermint candies.
- Serve chilled.
