  • 1/3 cup (75g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar (for crust)
  • 1 cup (240ml) heavy cream (for filling)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar (for filling)
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Red food coloring (optional)
  • 1/2 cup (120ml) heavy cream, whipped for topping
  • Crushed candy canes or peppermint candies for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture firmly into a 9-inch pie dish.
  2. Bake crust for 8-10 minutes until lightly browned. Remove from oven and let cool completely.
  3. In a large bowl, beat 1 cup heavy cream until stiff peaks form. Set aside.
  4. In another large bowl, beat cream cheese and 1/2 cup sugar until smooth and creamy.
  5. Add peppermint extract, vanilla extract, and red food coloring (if using) to cream cheese mixture. Mix until well combined.
  6. Gently fold whipped cream into cream cheese mixture until no streaks remain.
  7. Pour filling into cooled crust and smooth the top.
  8. Refrigerate for at least 4 hours or overnight until set.
  9. Before serving, whip remaining 1/2 cup heavy cream and spread or pipe over pie.
  10. Garnish with crushed candy canes or peppermint candies.
  11. Serve chilled.
