- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup shredded purple cabbage
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 avocado, thinly sliced
- 1 cup cooked rice vermicelli noodles
For the Peanut Sauce:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/4 cup water
Instructions
- Prepare all vegetables and herbs by washing and cutting them as specified.
- Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it softens.
- Lay the softened wrapper flat on a clean surface. Layer a small amount of each vegetable, herb, avocado, and noodles in the center of the wrapper.
- Fold the sides of the wrapper inward, then roll tightly from the bottom to enclose the filling. Repeat with remaining wrappers and fillings.
- For the peanut sauce, whisk together peanut butter, soy sauce, honey, lime juice, minced garlic, and water until smooth.
- Serve the rice paper rolls with the peanut sauce on the side for dipping.
