Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup shredded purple cabbage
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 avocado, thinly sliced
  • 1 cup cooked rice vermicelli noodles

For the Peanut Sauce:

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 cup water

Instructions

  1. Prepare all vegetables and herbs by washing and cutting them as specified.
  2. Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  3. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it softens.
  4. Lay the softened wrapper flat on a clean surface. Layer a small amount of each vegetable, herb, avocado, and noodles in the center of the wrapper.
  5. Fold the sides of the wrapper inward, then roll tightly from the bottom to enclose the filling. Repeat with remaining wrappers and fillings.
  6. For the peanut sauce, whisk together peanut butter, soy sauce, honey, lime juice, minced garlic, and water until smooth.
  7. Serve the rice paper rolls with the peanut sauce on the side for dipping.
