Ingredients

  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 6 cups mixed greens
  • 1 cup cooked corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Mix chili powder, cumin, garlic powder, onion powder, salt, and pepper. Rub on chicken.
  2. Heat olive oil in an oven-safe skillet. Sear chicken 2-3 minutes per side. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C). Let rest 5-10 minutes, then slice or shred.
  3. Combine mixed greens, corn, black beans, red bell pepper, red onion, avocado, cilantro, and cherry tomatoes in a large bowl.
  4. Whisk together olive oil, lime juice, apple cider vinegar, honey, Dijon mustard, chili powder, salt, and pepper.
  5. Add chicken to salad. Pour dressing over salad and toss. Serve immediately.
