- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 6 cups mixed greens
- 1 cup cooked corn kernels
- 1 cup black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1/2 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp Dijon mustard
- 1/4 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Mix chili powder, cumin, garlic powder, onion powder, salt, and pepper. Rub on chicken.
- Heat olive oil in an oven-safe skillet. Sear chicken 2-3 minutes per side. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C). Let rest 5-10 minutes, then slice or shred.
- Combine mixed greens, corn, black beans, red bell pepper, red onion, avocado, cilantro, and cherry tomatoes in a large bowl.
- Whisk together olive oil, lime juice, apple cider vinegar, honey, Dijon mustard, chili powder, salt, and pepper.
- Add chicken to salad. Pour dressing over salad and toss. Serve immediately.
