  • 2 medium cucumbers sliced into 1/4-inch rounds
  • 8 oz fresh mozzarella balls halved
  • 1 pint cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Wash and slice cucumbers into 1/4-inch rounds.
  2. Halve the cherry tomatoes and mozzarella balls.
  3. Combine cucumbers, tomatoes, mozzarella, and torn basil leaves in a large mixing bowl.
  4. Drizzle the olive oil and balsamic glaze over the salad.
  5. Season the mixture with sea salt and black pepper.
  6. Gently toss all ingredients until evenly coated.
  7. Serve immediately or chill for 10 minutes before serving.

Notes

Best served fresh, but can be chilled for up to 10 minutes to allow flavors to meld.
