  • 4 large flour tortillas 8-inch diameter
  • 1 lb boneless, skinless chicken pieces
  • 1/2 cup ranch dressing
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked black beans
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro chopped

Method
 

Preparation
  1. Preheat grill or grill pan to medium-high heat.
  2. Mix ranch dressing and minced chipotle peppers in a small bowl to create the chipotle ranch sauce.
  3. Brush chicken pieces with 2 tablespoons of the sauce and grill for 6-8 minutes per side until cooked through.
  4. Let chicken rest for 2 minutes, then slice into thin strips.
  5. Warm tortillas according to package directions.
  6. Spread remaining chipotle ranch sauce on each tortilla.
  7. Layer each tortilla with sliced chicken, lettuce, tomatoes, cheese, black beans, and cilantro.
  8. Fold sides inward and roll tightly from the bottom to form the burritos.
  9. Serve immediately with sour cream on the side.
