  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar halal alternative to red wine vinegar
  • 1/4 cup fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Wash and chop the cucumbers, cherry tomatoes, and red onion, then place them in a large salad bowl.
  2. Whisk together the extra virgin olive oil, apple cider vinegar, salt, and black pepper in a small bowl.
  3. Pour the dressing over the vegetables and toss gently to combine.
  4. Garnish with fresh chopped parsley and serve immediately.
