Ingredients

  • 2 cans whole peeled tomatoes 14 oz / 400g each
  • 1/2 cup low-sodium vegetable broth 120ml
  • 1/4 cup fresh basil leaves 15g
  • 2 cloves garlic 6g
  • 1 tbsp olive oil 15ml
  • 1/4 cup Greek yogurt 60g
  • Salt and black pepper to taste

Method
 

Preparation
  1. Add the canned tomatoes, vegetable broth, garlic, and olive oil to a high-speed blender.
  2. Blend on high for 2-3 minutes until completely smooth and creamy.
  3. Transfer the mixture to a medium saucepan and warm over medium heat for 5-10 minutes until hot.
  4. Stir in the fresh basil leaves and Greek yogurt, then blend for another 10 seconds.
  5. Season with salt and pepper to taste, ladle into bowls, and garnish with extra basil.

Notes

Serve warm with crusty bread or a side salad for a complete meal.
