Preparation
- Preheat oven to 350°F (180°C) and grease a 9x5 inch loaf pan.
- Combine cottage cheese and eggs in a food processor or blender and blend until completely smooth and creamy, about 1-2 minutes.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
