  • 4 pieces turkey cutlets approx. 450g / 1 lb, pounded thin
  • 2 tablespoons olive oil 30ml
  • 1/4 cup fresh lemon juice 60ml
  • 1/2 cup low-sodium chicken broth 120ml
  • 2 tablespoons fresh dill 8g, finely chopped
  • 2 cloves garlic minced
  • Salt and freshly cracked black pepper to taste

Method
 

Cooking Instructions
  1. Season the thin turkey cutlets on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the turkey for 2-3 minutes per side until golden brown and cooked through. Transfer to a plate.
  3. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the pan. Simmer for 3 minutes until slightly reduced.
  4. Stir in the fresh dill. Return the turkey to the skillet, spooning the sauce over the cutlets to coat them. Warm through for 1 minute and serve immediately.
