Preparation
- Preheat oven to 400°F (200°C).
- Toss the sliced beef sausage, zucchini, yellow squash, cherry tomatoes, and bell pepper in a bowl with olive oil, garlic powder, dried oregano, salt, and black pepper until evenly coated.
- Spread the ingredients in a single layer on a sheet pan.
- Roast for 15-20 minutes, or until the vegetables are tender and the beef sausage is lightly browned and crisp at the edges. Serve hot.
