  • 1 1/2 cups sushi rice cooked and cooled
  • 1 lb imitation crab (surimi) shredded
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seeds
  • 1 avocado sliced
  • 1 cucumber julienned
  • 2 green onions sliced
  • Nori strips for garnish

Method
 

Preparation
  1. In a small bowl, whisk together the mayonnaise, sriracha, and rice vinegar until smooth to create the spicy sauce.
  2. In a large bowl, combine the cooked sushi rice, shredded surimi, and half of the prepared spicy sauce; mix gently until combined.
  3. Divide the rice and surimi mixture equally among four serving plates.
  4. Top each serving with avocado slices, julienned cucumber, green onions, and a sprinkle of sesame seeds.
  5. Drizzle the remaining sauce over the top of the salads, garnish with nori strips, and serve immediately.

Notes

Ensure the sushi rice is fully cooled before mixing to maintain the texture of the salad.
