  • 1 1/2 cups sushi rice, cooked and cooled approx 300g
  • 1 lb imitation crab (surimi), shredded approx 450g
  • 1/2 cup mayonnaise approx 120ml
  • 2 tbsp sriracha sauce approx 30ml
  • 1 tbsp rice vinegar approx 15ml
  • 1 tbsp sesame seeds approx 15g
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • Nori strips for garnish

Method
 

Preparation
  1. Whisk mayonnaise, sriracha, and rice vinegar in a small bowl to create the spicy sauce.
  2. Combine the cooked sushi rice, shredded surimi, and half of the spicy sauce in a large bowl, mixing gently.
  3. Divide the salad mixture evenly among four serving plates.
  4. Top each serving with avocado slices, cucumber, green onions, and sesame seeds.
  5. Drizzle the remaining sauce over the salads and garnish with nori strips before serving immediately.

Ensure the sushi rice is fully cooled before mixing to maintain the texture of the salad.
