  • 1/2 cup sweet chili sauce 120ml
  • 2 tbsp soy sauce 30ml
  • 1 tbsp vegetable oil 15ml
  • 2 cloves garlic, minced 10g
  • 1 tsp grated ginger 5g
  • 2 cups cooked jasmine rice 400g
  • 1 cup shredded carrots 100g
  • 1 cup sliced cucumber 150g
  • 1/4 cup chopped green onions 25g
  • 1 tbsp sesame seeds 9g

Preparation
  1. Combine chicken pieces with sweet chili sauce, soy sauce, minced garlic, and grated ginger in a medium bowl; let marinate for 5 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the marinated chicken to the skillet and cook for 8-10 minutes, stirring occasionally, until cooked through and caramelized.
  4. Divide the cooked jasmine rice into four serving bowls.
  5. Top the rice with the cooked chicken, shredded carrots, sliced cucumber, and chopped green onions.
  6. Drizzle any remaining sauce from the skillet over the bowls, sprinkle with sesame seeds, and serve immediately.
