Salad Base
  • 3 cups fresh arugula 150g
  • 1 large apple thinly sliced, 200g
  • 1/2 cup walnuts chopped, 60g
  • 1/4 cup dried cranberries 40g
  • 1/4 cup shaved Parmesan cheese 30g
Vinaigrette
  • 3 tbsp extra virgin olive oil 45ml
  • 1 tbsp apple cider vinegar 15ml
  • 1 tsp Dijon mustard 5ml
  • 1 tsp honey 5ml
  • Salt and pepper to taste

Method
 

Preparation
  1. Combine arugula, apple slices, walnuts, cranberries, and Parmesan in a large bowl.
  2. Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small bowl.
  3. Drizzle the vinaigrette over the salad and toss gently to coat before serving.

Serve immediately to ensure the arugula remains crisp and the apple slices do not brown.
