Salad Base
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell peppers diced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup canned chickpeas drained
  • 1/4 cup pepperoncini sliced
  • 1/4 cup Parmesan cheese grated
Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

Preparation
  1. Combine romaine lettuce, cherry tomatoes, cucumber, red onion, bell peppers, olives, chickpeas, pepperoncini, and Parmesan cheese in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss until well coated, then serve immediately.

Notes

Serve immediately for the best texture. If preparing ahead, keep the dressing separate until ready to serve.
