Method
 

Preparation
  1. Whisk together soy sauce, peanut butter, lime juice, garlic, and ginger in a bowl to create the marinade.
  2. Add the chicken thighs to the bowl and coat thoroughly with the marinade.
  3. Marinate the chicken in the refrigerator for at least 30 minutes.
  4. Preheat your oven to 400F or prepare your grill for medium-high heat.
  5. Bake for 20-25 minutes or grill for 6-8 minutes per side until the chicken is cooked through.
  6. Serve the chicken warm, garnished with fresh cilantro.
