Preparation
- Thread the cubed chicken onto wooden skewers and brush them generously with BBQ sauce.
- Heat olive oil in a grill pan over medium-high heat.
- Grill the skewers for 5-6 minutes on each side until the chicken is fully cooked through.
- Combine the romaine lettuce, cherry tomatoes, sweet corn, and red onion in a large salad bowl.
- Slide the warm BBQ chicken off the skewers and arrange them on top of the salad.
- Drizzle with additional BBQ sauce or dressing and serve immediately.
