  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1/2 cup BBQ sauce ensure halal certified
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sweet corn kernels
  • 1/4 cup sliced red onion
  • 2 tbsp olive oil

Method
 

Preparation
  1. Thread the cubed chicken onto wooden skewers and brush them generously with BBQ sauce.
  2. Heat olive oil in a grill pan over medium-high heat.
  3. Grill the skewers for 5-6 minutes on each side until the chicken is fully cooked through.
  4. Combine the romaine lettuce, cherry tomatoes, sweet corn, and red onion in a large salad bowl.
  5. Slide the warm BBQ chicken off the skewers and arrange them on top of the salad.
  6. Drizzle with additional BBQ sauce or dressing and serve immediately.

Notes

Ensure chicken is cooked to an internal temperature of 165°F (74°C).
