  • 4 medium sweet potatoes 400g
  • 2 cups shredded cooked chicken breast 480g
  • 1 cup barbecue sauce halal-certified, 240ml
  • 1/2 cup shredded cheddar cheese 60g
  • 1/4 cup fresh cilantro chopped, 15g

Method
 

Preparation
  1. Preheat your oven to 400F (200C).
  2. Pierce each sweet potato several times with a fork and bake for 45-60 minutes until tender.
  3. In a mixing bowl, toss the shredded cooked chicken with the barbecue sauce until well coated.
  4. Slice the baked potatoes open, fluff the insides with a fork, and mound the BBQ chicken mixture on top.
  5. Sprinkle the shredded cheese over the chicken and return to the oven for 5 minutes until the cheese is melted.
  6. Garnish with fresh cilantro before serving.
