  • 4 cups romaine lettuce chopped
  • 1 cup mango diced fresh
  • 1 cup pineapple diced fresh
  • 1/2 cup red bell pepper diced
  • 1/2 cup black beans drained canned
  • 1/2 cup red onion sliced
  • 1/4 cup fresh cilantro chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1/2 tsp salt

Method
 

Preparation
  1. Combine the romaine lettuce, mango, pineapple, red bell pepper, black beans, and red onion in a large salad bowl.
  2. Whisk the olive oil, lime juice, honey, and salt together in a small jar to create the dressing.
  3. Drizzle the prepared dressing over the salad and toss gently to combine.
  4. Garnish the salad with chopped fresh cilantro and serve immediately.

Notes

Serve immediately for the best texture. Can be stored in the refrigerator for up to 2 hours before the fruit releases too much juice.
