Preparation
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or oil.
- Whisk together eggs, cottage cheese, cheddar cheese, salt, black pepper, and garlic powder in a large bowl until well combined.
- Stir the chopped spinach, diced red bell pepper, and diced onion into the egg mixture.
- Pour the mixture evenly into the muffin cups, filling each approximately 3/4 full.
- Bake for 20-25 minutes until the egg bites are set and lightly golden on top.
- Cool in the tin for 5 minutes before removing and serving warm.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
