  • 1 cup shredded cheddar cheese 113g
  • 1/2 cup chopped spinach 15g
  • 1/4 cup diced red bell pepper 30g
  • 1/4 cup diced onion 30g
  • 1/2 teaspoon salt 3g
  • 1/4 teaspoon black pepper 0.5g
  • 1/4 teaspoon garlic powder 0.5g
  • 1 Cooking spray or oil for greasing

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or oil.
  2. Whisk together eggs, cottage cheese, cheddar cheese, salt, black pepper, and garlic powder in a large bowl until well combined.
  3. Stir the chopped spinach, diced red bell pepper, and diced onion into the egg mixture.
  4. Pour the mixture evenly into the muffin cups, filling each approximately 3/4 full.
  5. Bake for 20-25 minutes until the egg bites are set and lightly golden on top.
  6. Cool in the tin for 5 minutes before removing and serving warm.
