Preparation
- Preheat oven to 375°F (190°C) and grease a 9x13 inch glass baking dish.
- Brown the ground beef in a large skillet over medium heat until fully cooked and drain excess fat.
- Add taco seasoning and water to the beef, stir, and simmer for 5 minutes.
- Whisk together the cream of mushroom soup, milk, and sour cream in a mixing bowl until smooth.
- Layer half of the crushed tortilla chips into the bottom of the prepared baking dish.
- Spread the seasoned beef mixture evenly over the chip layer.
- Distribute the black beans and corn kernels over the beef.
- Pour the soup mixture evenly over the existing layers.
- Sprinkle the shredded cheddar cheese over the top.
- Top with the remaining crushed tortilla chips.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Allow the casserole to cool for 5 minutes before serving.
