  • 1 bag crushed nacho cheese tortilla chips 283g
  • 1 lb ground beef 450g
  • 1 can black beans 15oz, drained and rinsed
  • 1 can condensed cream of mushroom soup 10.5oz
  • 1 cup milk 240ml
  • 2 cups shredded cheddar cheese 200g
  • 1 cup frozen corn kernels 150g
  • 1 packet taco seasoning 1oz
  • 1/2 cup sour cream 120g
  • 1/4 cup water 60ml

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9x13 inch glass baking dish.
  2. Brown the ground beef in a large skillet over medium heat until fully cooked and drain excess fat.
  3. Add taco seasoning and water to the beef, stir, and simmer for 5 minutes.
  4. Whisk together the cream of mushroom soup, milk, and sour cream in a mixing bowl until smooth.
  5. Layer half of the crushed tortilla chips into the bottom of the prepared baking dish.
  6. Spread the seasoned beef mixture evenly over the chip layer.
  7. Distribute the black beans and corn kernels over the beef.
  8. Pour the soup mixture evenly over the existing layers.
  9. Sprinkle the shredded cheddar cheese over the top.
  10. Top with the remaining crushed tortilla chips.
  11. Bake for 25-30 minutes until the cheese is melted and bubbly.
  12. Allow the casserole to cool for 5 minutes before serving.

Notes

Ensure the ground beef is fully drained to prevent a greasy casserole. This dish can be prepared ahead of time and baked when ready.
