  • 2 large sweet potatoes cubed
  • 1 can black beans drained and rinsed
  • 1 cup quinoa cooked
  • 1 avocado sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 pinch salt to taste

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, chili powder, cumin, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. Mix black beans with lime juice and a pinch of salt in a small bowl.
  5. Divide quinoa, roasted sweet potatoes, black beans, avocado, and tomatoes into bowls.
  6. Garnish with fresh cilantro and serve warm.
