  • 2 cups cherry tomatoes, halved approx 300g
  • 1 cup fresh mozzarella pearls approx 150g
  • 1/2 cup fresh basil leaves, torn approx 15g
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper

Method
 

Preparation
  1. Combine the chopped peaches, halved cherry tomatoes, and fresh mozzarella pearls in a large bowl.
  2. Gently toss the ingredients together until evenly distributed.
  3. Drizzle the extra virgin olive oil and balsamic glaze over the mixture.
  4. Season the salad with sea salt and freshly cracked black pepper.
  5. Scatter the torn fresh basil leaves on top, toss gently, and serve immediately.

Notes

Best served immediately to ensure the peaches stay firm and the basil remains fresh.
