  • 1 lb ground beef
  • 2 tbsp neutral oil
  • 4 slices American cheese
  • 2 each brioche buns toasted
Secret Sauce
  • 4 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tsp yellow mustard

Method
 

Instructions
  1. Preheat a heavy cast-iron skillet over high heat until smoking.
  2. Form the ground beef into four equal 4oz balls.
  3. Place the beef balls in the skillet and smash them flat using a heavy spatula.
  4. Season with salt and pepper, cook until crispy edges form, then flip.
  5. Top the patties with cheese and allow to melt.
  6. Whisk mayonnaise, ketchup, and mustard together in a small bowl to create the sauce.
  7. Assemble the burgers on toasted buns with the secret sauce.

Ensure the skillet is smoking hot before adding the beef to achieve the perfect crispy crust.
