  • 2 cups coconut water
  • 1 cup mango chunks
  • 1 cup pineapple chunks
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

  • Fine mesh strainer
  • Measuring cup
  • Popsicle molds

Method
 

Preparation
  1. Combine all ingredients in a blender and blend until completely smooth.
  2. Pour the mixture through a fine mesh strainer into a large measuring cup to remove any pulp.
  3. Pour the strained mixture into popsicle molds, leaving about 1/4 inch space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 6 hours or until completely solid.
  5. Run warm water over the outside of the molds for 10-15 seconds to unmold, then gently pull out the popsicles.

Notes

Store wrapped individually in plastic wrap in the freezer for up to 2 weeks.
