  • 8 oz penne pasta
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup Parmesan cheese grated
Dressing
  • 1/4 cup Caesar dressing halal-certified
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Method
 

Preparation
  1. Cook the penne pasta according to package directions until al dente, then drain and rinse under cold water.
  2. Combine the cooked pasta, chopped romaine lettuce, and halved cherry tomatoes in a large mixing bowl.
  3. Whisk together the Caesar dressing, Greek yogurt, lemon juice, garlic powder, black pepper, and salt in a small bowl until smooth.
  4. Pour the dressing over the pasta salad mixture and toss gently until evenly coated.
  5. Sprinkle the grated Parmesan cheese over the top.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
