  • 4 cups chopped kale 120g
  • 2 cups corn kernels fresh or frozen, 300g
  • 1/2 cup plain Greek yogurt 120ml
  • 1/4 cup mayonnaise 60ml
  • 1/4 cup fresh cilantro chopped, 15g
  • 2 tbsp lime juice 30ml
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 cup crumbled feta cheese 30g
  • salt and pepper to taste

Method
 

Preparation
  1. Massage kale with a drizzle of olive oil and a pinch of salt for 2 minutes until tender.
  2. Grill or sauté corn until charred if fresh, or thaw and pat dry if using frozen, then let cool.
  3. Whisk yogurt, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper in a small bowl.
  4. Combine kale, corn, cilantro, and feta in a large bowl, pour the dressing over the top, and toss well.
  5. Let the salad sit for 10 minutes before serving to allow the flavors to meld.

Ensure kale is thoroughly washed and dried before massaging to achieve the best texture.
