- Boil a large pot of salted water and cook pasta until al dente, reserving 0.5 cup of pasta water.
- Melt butter in a large skillet over medium-high heat.
- Add oyster mushrooms to the skillet and sauté until golden brown.
- Stir in minced garlic and cook for one minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer, then reduce heat and stir in parmesan until smooth.
- Toss in the cooked pasta and thyme, adding reserved pasta water if needed to adjust consistency, and season with salt and pepper.
Notes
Ensure mushrooms are dry before sautéing to get a better golden crust.
