Cooking Steps
- Heat olive oil in a large pot over medium heat, add diced onion, and cook until softened.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth and diced tomatoes, add Italian seasoning, salt, and pepper, and bring to a simmer.
- Add cheese ravioli and cook according to package directions.
- Reduce heat to low, stir in heavy cream and fresh spinach, and cook for 2 minutes until wilted.
- Remove from heat, stir in grated Parmesan cheese until melted, and serve.
