  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes 400g
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 package cheese ravioli 400g
  • 2 cups heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat, add diced onion, and cook until softened.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in vegetable broth and diced tomatoes, add Italian seasoning, salt, and pepper, and bring to a simmer.
  4. Add cheese ravioli and cook according to package directions.
  5. Reduce heat to low, stir in heavy cream and fresh spinach, and cook for 2 minutes until wilted.
  6. Remove from heat, stir in grated Parmesan cheese until melted, and serve.

Notes

Serve immediately while warm. Store leftovers in an airtight container for up to 3 days.
