  • 2 lbs beef stew pieces
  • 4 large potatoes, cut into chunks
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 to taste salt and pepper

Method
 

Preparation
  1. Place beef pieces and potato chunks in a crockpot.
  2. Pour beef broth over the top and season with garlic powder, paprika, salt, and pepper.
  3. Cover and cook on low for 6-8 hours until beef is tender and potatoes are soft.
  4. Stir in sour cream and half of the shredded cheese until melted and combined.
  5. Top with remaining cheese and green onions.
  6. Serve hot from the crockpot or transfer to a serving dish.
