  • 4 cups romaine lettuce chopped
  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1 cup Parmesan cheese shredded
  • 1/2 cup croutons
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1 pinch salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, bell pepper, and red onion.

  3. Pour the dressing over the salad ingredients and toss gently to coat evenly.
