Pie Filling
  • 1 pie crust store-bought or homemade
  • 3 large eggs
  • 1 cup light corn syrup 200g
  • 1/2 cup granulated sugar 100g
  • 1/4 cup packed brown sugar 50g
  • 1/4 cup unsalted butter melted, 56g
  • 2 teaspoons vanilla extract 10ml
  • 1/4 teaspoon salt 1.25g
  • 1 cup semi-sweet chocolate chips 120g
  • 1 1/2 cups pecan halves 180g

Equipment

  • 9-inch pie plate
  • Large Mixing Bowl
  • Whisk
  • Wire cooling rack

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and crimp the pie crust into a 9-inch pie plate.
  2. Whisk together the eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt in a large bowl until the mixture is smooth.
  3. Stir the chocolate chips and pecan halves into the mixture until they are evenly distributed.
  4. Pour the filling into the prepared crust and spread the pecans evenly across the top.
  5. Bake for 50-60 minutes until the center is set and the crust is golden brown, covering edges with foil if needed.
  6. Allow the pie to cool completely on a wire rack before slicing and serving.

Notes

Cover the crust edges with foil if they start to brown too quickly to prevent burning.
