  • 1 tsp baking soda
  • 1 tsp white vinegar
  • 1 tbsp cocoa powder
  • 1/2 tsp salt
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Steps
  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, sugar, cocoa powder, and salt in a medium bowl.
  3. Mix buttermilk, oil, egg, red food coloring, and vanilla in a separate bowl.
  4. Combine wet and dry ingredients until just mixed.
  5. Mix baking soda and vinegar in a small bowl, then fold into the batter.
  6. Beat cream cheese and sugar for filling until smooth, then mix in egg and vanilla.
  7. Fill liners halfway with batter, add a spoonful of filling, and cover with remaining batter.
  8. Bake for 18-22 minutes until a toothpick comes out clean, then cool completely.
  9. Beat cream cheese and butter for frosting until creamy, then gradually add powdered sugar and vanilla.
  10. Frost the cooled cupcakes and serve.
