  • 2 cups shredded cooked chicken
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Combine shredded chicken, refried beans, cheddar cheese, tomatoes, cilantro, and spices in a medium mixing bowl.
  3. Lay out the flour tortillas and spoon 1/4 cup of the mixture onto each.
  4. Roll the tortillas tightly, tucking in the ends to secure the filling.
  5. Arrange the rolls seam-side down on a parchment-lined baking sheet.
  6. Brush the tops of the rolls lightly with olive oil.
  7. Bake for 15-20 minutes until the exterior is golden brown and crispy.
  8. Allow the antojitos to cool for 5 minutes before serving warm.
