Preparation
- Preheat your oven to 375°F (190°C).
- Combine shredded chicken, refried beans, cheddar cheese, tomatoes, cilantro, and spices in a medium mixing bowl.
- Lay out the flour tortillas and spoon 1/4 cup of the mixture onto each.
- Roll the tortillas tightly, tucking in the ends to secure the filling.
- Arrange the rolls seam-side down on a parchment-lined baking sheet.
- Brush the tops of the rolls lightly with olive oil.
- Bake for 15-20 minutes until the exterior is golden brown and crispy.
- Allow the antojitos to cool for 5 minutes before serving warm.
