  • 1/4 cup fresh dill chopped
  • 1/4 cup red onion thinly sliced
  • 4 cups mixed greens
  • 1/4 cup feta cheese crumbled (optional)
Dressing Ingredients
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar halal alternative to red wine vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Roast beets at 400°F (200°C) for 45-60 minutes until tender, then peel and slice them.
  2. Whisk together olive oil, apple cider vinegar, honey, salt, and pepper in a bowl to create the marinade.
  3. Combine sliced beets, red onion, and dill in a separate bowl.
  4. Pour the marinade over the beet mixture and toss gently to coat.
  5. Let the mixture marinate at room temperature for 20-30 minutes.
  6. Arrange the mixed greens on a serving platter or individual plates.
  7. Top the greens with the marinated beet mixture.
  8. Sprinkle with crumbled feta cheese if using and serve.

Serve immediately or refrigerate for up to 2 hours before serving.
