  • 1 cup granulated sugar 200g
  • 1/2 cup unsalted butter softened, 115g
  • 2 eggs large
  • 1 tbsp fresh orange zest
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat oven to 350F (175C) and line a muffin tin with paper liners.
  2. Cream the butter and sugar in a mixing bowl until light and fluffy.
  3. Beat in the eggs and fresh orange zest until well combined.
  4. Gradually fold in the flour and milk, mixing until the batter is smooth.
  5. Pour batter into the muffin tin and bake for 18 minutes until golden.
  6. Cool the cupcakes completely on a wire rack before frosting with orange-infused buttercream.
