  • 2 cups English cucumber, sliced approx 300g
  • 1 cup cherry tomatoes, halved approx 150g
  • 8 ounces fresh mozzarella pearls approx 225g
  • 1/4 cup fresh basil leaves approx 10g
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze

Method
 

Preparation
  1. Slice the cucumbers into rounds and halve the cherry tomatoes.
  2. Combine the cucumber slices, tomatoes, and mozzarella pearls in a large bowl.
  3. Add the fresh basil leaves to the mixture.
  4. Drizzle the extra virgin olive oil and balsamic glaze evenly over the salad.
  5. Toss the salad gently to combine and serve immediately.

Notes

Serve immediately for the best texture. If preparing ahead, add the balsamic glaze just before serving to prevent wilting.
